Oh My Holy Blessed Stars!

​​Oh my holy blessed stars but this was delicious!! After several days of feeling like something ​​the cat....oh, let's not go there...

After several days of feeling like I'd been mauled and left for...... shoot, I don't like that one either!

OK... I felt really, super, dooper YUCKY! Down right AWFUL! Achy, whiny (though, I hid that part well!)

Back to the delicious! That's always better. I'm sure that you shall see, if you decide to traverse this journey with me, that FOOD will be a topic we'll "touch" on! I didn't get to be the size I am by not liking food. THEREFORE, when I've COMPLETELY changed up my eating to try and get those darned triglycerides in there optimum range, well, food might come up.

So... back to tonight!​​

I slept all of today (Sunday) away... I figured, not only was I working at getting over being sick, but the idiots that be thought it was a good day to steal an hour in the middle of the night! YUP, We'll cut off a foot of blanket on the bottom, sew it on the top and have a longer blanket so NO ONE EVER!

Wow, I should listen to the feedback at Toastmasters when they say that my storytelling is rather "adventurous!"

I woke up. Feeling WAY BETTER, and had been DREAMING about a meatball sandwich. The kind I made when I was a Subway Sandwich Artist but better!!

​Blessed be Barry, Conveyer of IKEA veggie meatballs, I was well on my way! I didn't have bread or spaghetti sauce so off to the market I trotted... well, I trotted, eh, meandered, to the car and walked purposefully inside... Noting that the parking lot has HORRIBLE lighting (a topic for another day).

When I got my treasures home, I cut open the bread and spritzed it with oil. I set it in to broil. I took out the frozen meatballs and started them cooking. Then sliced up onions and yellow and red bell peppers and put in the pot. I opened the can of spaghetti sauce and poured in JUST enough! I let that bubble away for a few minutes while preparing the toasted bread. Just Mayo (vegan) slathered on the surface and honey mustard drizzled in an artful zigzag begins the filling of the sandwich. Scooping up the steaming meatballs, veggies and sauce and placing it carefully upon one side of the bread has my mouth watering. I sprinkled Parmesan cheeze (recipe to follow) and then Daiya mozzarella cheeze. I set it back under the broiler while trying to remember where I put my camera AND did I have time to look for it before the cheeze got too brown... quandaries!

EVERYTHING turned out COMPLETELY perfect, except for the fact that there was no one that wanted to come and share it with me... I nearly ate the whole thing myself! I'm so pleasantly, wonderfully full!

<Sigh> Life is good! Now for a glass of wine! :-)

**Parmesan Cheeze**

I use a Vitamix (for nearly everything!)

3/4 cups cashews

1/4 cup nutritional yeast

1 teaspoon salt

1/2 teaspoon garlic powder

WHIZ up in the Vitamix and put in a green shaker :-) ENJOY!

It goes great on anything Italian! Pastas, veggies, popcorn - the list is endless!
